My favorite part of summer is in season produce. Especially fresh ripe tomatoes and basil. My mom has always kept a garden and I have fond memories of summer days at our house enjoying a caprese salad or a bacon, lettuce, and tomato (BLT) sandwich. I’ve tried growing a garden at my own home with fresh tomatoes and basil. However, living in apartments, there’s never enough sunlight or space for plants to grow. Even though I can’t grow my own tomatoes, that doesn’t mean I can’t still enjoy them. I love tomato, basil, and mozzarella served any way, and I especially enjoy this caprese tomato basil mozzarella wrap recipe.

This Caprese Tomato Basil Mozzarella Wrap recipe is easy to pack on the go. My preferred way to pack a sandwich or wrap is to pack all the ingredients separately, and then prepare my meal at the office. With this wrap, I pack the basil in a sandwich bag or carry in the original container. I also bring the original bag or container of mozzarella cheese. For the tomatoes, I slice in the morning and place in a travel container or I bring the whole tomatoes and slice at work. I keep a small bottle of balsamic vinegar at my desk. I also keep a package of wraps or tortillas in my office fridge.
If you like warm sandwiches, this is great recipe to toast. For a crispy wrap, I use toaster bags from Amazon. Toasting adds a nice crunch and melts the cheese. - For easy folding, heat tortilla in microwave for 10 seconds. Chop tomatoes, basil, and mozzarella (if using fresh mozzarella) and place on tortilla. Add salt and pepper and a dash of balsamic vinegar.
- Wrap tortilla and place in toaster bag. Toast on high until wrap is crisp and cheese is melted, being careful not to burn. Use caution when removing toaster bags from toaster.
